MOFAD x Gastro Obscura Presents: Koji Alchemy

Chefs Jeremy Umansky and Rich Shih—collectively considered to be the most practical, experienced, generous educators on the culinary power of Koji—deliver a comprehensive look at its modern use around the world. Using it to rapidly age charcuterie, cheese, and other ferments, they take the magic of koji to the next level, revolutionizing the creation of fermented foods and flavor profiles for both professional and home cooks.

Join them as they discuss their book, Koji Alchemy, which is devoted to processes, concepts, and recipes for fermenting and culturing foods with koji, the microbe behind the delicious, umami flavors of soy sauce, miso, mirin, and so many of the ingredients that underpin Japanese cuisine

Included will be a demo on how koji can be used to transform basic pantry staples like beans, into something delicious, a skill that will be beneficial to all, especially during these uncertain times.

Tickets for admission are available at two levels: Level One includes a reserved ticket and Level Two includes a reserved ticket plus a copy of Koji Alchemy. Please note the cost of the book includes shipping and sales tax. RICH SHIH

Jeremy Umansky is a chef/owner of Larder: A Curated Delicatessen & Bakery in Cleveland, Ohio, nominated by the James Beard Foundation as the Best New Restaurant in America in 2019.
