Hawaii Cuisine: Beyond Pineapples with Chef Sheldon Simeon

Join chef, restaurateur, and Top Chef finalist Sheldon Simeon on a culinary journey through the tastes, flavors, and ingredients that make up both traditional and modern Hawaii foods. Sheldon's love and appreciation for his home state's culinary traditions have taken him from Maui Culinary Academy to opening up his own restaurant on Maui, Tin Roof.

Elyse Inamine of Food & Wine will join Sheldon for a discussion on the tastes of Hawaii before he gives a demo of a delicious poké dish. An informal reception featuring poké and Brooklyn Brewery beer will follow.

About Sheldon Simeon

Born in Hilo on the Big Island, Chef Sheldon acquired his love for cooking from his parents. His path led him from Hilo High to the Culinary Institute of the Pacific onto an internship at Walt Disney World. Upon returning to Hawaii, he attended Maui Culinary Academy. Sheldon competed in the 10th season of Bravo Network’s Top Chef: Seattle as a finalist and winning Fan Favorite. He has recently opened up his own restaurant, Tin Roof, in Kahului, Maui, and serves up local dishes in take-out bowls.  

Sheldon’s food is a playful, fun take on classic dishes. His mix of innovative, modern cuisine and adherence to tradition influences his dishes and helps shape his menus. His growing legion of loyal fans will attest to his award-winning creativity. Chef Sheldon welcomes customers to his restaurant as he would his home with a relaxed community atmosphere.
